Blueberry & Strawberry Crepes (Low Calorie)

What's up! Here's my first official food blog/log. I've been keeping track of my daily meals over on my Instagram (@NeizhaB) in the Food Highlight.

Here is my low calorie (Under 300 calorie) version of a Blueberry and Strawberry Crepe. This is not a completely from scratch recipe but it will take you no more than 10 minutes to whip up.

Crepe Ingredients:

• 2/3 cup of Bisquick mix

• 1 egg white

• 1/2 cup of unsweetened almond milk

• 1 tsp of granulated white sugar

• 1/4 tbs of butter

Directions:

1. Mix the ingredients in a bowl until nice and loose. The looser the better to make great crepes. (So i've realized lol).

2. Add a 1/2 tbs of butter to the pan and spread it across evenly. Or if you have a butter or oil that sprays use that instead. That's even less calories!

3. Pour some of the mix across the pan and spread it. The goal is to get it as even as possible. This is something I struggled with lol :)

4. Let it sit for at least a minute or until it is lightly toasted and stiff enough that it isn't falling apart when you try to flip it over. Once toasted enough on the other side sit it aside.

5. Repeat steps 3 & 4 until you're done. You can add more butter or another squirt of butter spray but be careful because, calories lol.

*You should be able to make 2 large crepes or 3 medium ones like mine.

Crepe Filling:

• 2 or 4 tbs of lite whipped cream *20 cal each 2 tbs ;)

• 1/4 cup of blueberries • 2 sliced strawberries

1. Place crepe down, darker side up on a plate and spread some of the lite whipped cream on one half of the crepe.

2. On that same half, spread out the sliced strawberries and blueberries. Save some for the remaining crepe or 2.

3. Fold the plain side of the crepes over the filled side once. Then fold them in half again. Be careful not to knock the ingredients out.

4. Place the crepe on a new plate and repeat steps 1 - 3 until done. Make it cute :)

Topping Ingredients:

• 1/4 cup of blueberries • 1/4 cup of chopped strawberries

• 1 tsp of granulated white sugar

• Whipped cream in a can

• 1/4 tbs of butter

Directions:

1. Get a non stick pan and set it to medium heat. Once heated put the butter in the pan.

2. Once the butter is melted put the strawberries and blueberries in the pan and mix, mix, mix. They will start to caramelize and give you that good ole syrup.

3. Pour the topping across the crepes, you can use a fork or spoon to help guide your syrup.

4. Spray a little of your canned whip cream in the corner.

BOOM! Under 300cal breakfast!
